Have you ever had a truly visceral need for cookies? Because I think I get that like, once a week. One night after a long work day was over, I needed a cookie. As in, not just wanted a cookie, but needed a cookie.

I whipped this soft and chewy chocolate chip cookie recipe up super quickly because I had absolutely no time to waste. The recipe took ten minutes to prepare (at most) and although the cookies aren't the prettiest, they've got that classic chocolate chip cookie feeling to them.

The taste of these chocolate chip cookies is super nostalgic–– they'll make you feel like you're five years old again and you're discovering that chocolate chip cookies are, in fact, the greatest joy in life. No, they're not Instagram-worthy... but if you're using this recipe, chances are you're more concerned about tasting the cookie than 'gramming it.

This certainly won't be my only take on chocolate chip cookies–– just the quickest and simplest one. I'm excited to come back to this classic and develop different methods, because there are just so many kinds of chocolate chip cookies you can make.

Soft and Chewy Chocolate Chip Cookies
A basic chocolate chip cookie recipe for soft, large cookies that make you feel five years old again.
  • 3/4 cup (1 1/2 sticks) unsalted butter, melted
  • 1 cup light brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 3/4 tsp salt
  • 1/4 tsp ground nutmeg
  • 1 1/2 cups semi-sweet chocolate chips
1. Preheat oven to 350ºF.2. Mix together melted butter, brown sugar and granulated sugar until well combined.3. Add eggs and vanilla until well combined. Make sure butter has cooled before you add the eggs, or they will cook.4. Whisk together flour, baking powder, salt and nutmeg in a separate bowl.5. Combine dry and wet ingredients with mixer.6. Fold in the chocolate chips with a spatula or large spoon.7. For large cookies, scoop using a 1/4 measuring cup and place far apart. For smaller cookies, use a tablespoon to scoop. The dough should be sticky and not the easiest to work with.8. Bake smaller cookies for 10-12 minutes, or larger cookies for 12-14 minutes, or until slightly golden and a little underdone.9. Remove and let cool on sheet for 3-4 minutes before allowing to cool on a rack completely.
